The Pollard 2020 Cabernet Franc is elegant and expressive wine with a nose of hibiscus and rose flower. A burst of gooseberry and dried strawberries on the first sip, followed by rosemary, thyme and sage in the middle palate and a long smooth finish with just the right balance of structure and tannin. Pairs well with lamb, game meat and hearty vegetable cassoulets.
"When Franc gets overripe, the lines between it and Cabernet Sauvignon begin to blur, and for me, the wine gets less interesting. Part of what makes Robin's version so special is that she's harvesting early enough (13.3% listed alc; see what I mean?) to produce a wine that is very comfortable in its Cab Franc skin, with complexities of arugula and dried flower complementing a core of minerally brambleberry fruit. And of course by harvesting early, the team at Pollard also retains racy natural acidity, which again makes this a joyful drinking experience. This Franc positively hums from front to finish, its briary berry fruit charactful and delicious, and that finish arrives with dusty-fine tannins, subtly green with their finishing kiss of sencha.
